Vegetarian Vegetable Soup

We've been craving vegetable soups lately.  I pretty much made this one up, adding alot of the stuff we like.  I didn't really measure anything out, so use your own judgement!

Vegetarian Vegetable Soup

1 box Trader Joe's Very Veggie Soup
24 oz water
1 tsp fresh thyme
1/2 tbsp dried oregano
1 pound small potatoes, quartered
1 can kidney beans, drained & rinsed
1 can diced tomatoes, with juice
1/2 pound carrots, peeled and sliced
1 zucchini, quartered and sliced
1 bag frozen peas
top with fresh grated parmesan cheese

Combine ingredients through tomatoes.  Simmer for 30 minutes or until potatoes are tender.  Stir in zucchini and peas, return to a boil.  Remove from heat and serve topped with cheese.
