My Favorite Lentil Soup



This lentil soup has become one of my favorite recipes.  It's super easy to make, lightening fast in my electric pressure cooker, and I typically have all of the ingredients on hand.  It's also nice because, with the exception of the salt and pepper, every ingredient is easy to find organic!


Lentil Soup

Ingredients
  •  2 medium carrots, diced
  • 1/2 of a 6 oz. can tomato paste
  • 4 cups chicken broth
  • 2 medium potatoes, diced
  • 1 14 oz. can diced tomatoes
  • 1 cup dried lentils
  • 2 teaspoons curry powder
  • 1/4 tsp ground cumin
  • 1/4 tsp dried thyme
  • 2 tsp salt
  • freshly ground pepper 

Directions
  1. Combine all ingredients in the pot of an electric pressure cooker. 
  2. Cook on high pressure for 20 minutes. 
  3. Eat and enjoy!
*This soup is also simple to make on the stovetop, it just takes a little longer.
