This lentil soup has become one of my favorite recipes. It's super easy to make, lightening fast in my electric pressure cooker, and I typically have all of the ingredients on hand. It's also nice because, with the exception of the salt and pepper, every ingredient is easy to find organic!
Ingredients
- 2 medium carrots, diced
- 1/2 of a 6 oz. can tomato paste
- 4 cups chicken broth
- 2 medium potatoes, diced
- 1 14 oz. can diced tomatoes
- 1 cup dried lentils
- 2 teaspoons curry powder
- 1/4 tsp ground cumin
- 1/4 tsp dried thyme
- 2 tsp salt
- freshly ground pepper
Directions
- Combine all ingredients in the pot of an electric pressure cooker.
- Cook on high pressure for 20 minutes.
- Eat and enjoy!
