Tomato Crazy!

This house has gone tomato crazy! I spent hours pureeing 30 pounds of tomatoes and now they are waiting to be made into something delicious. I started with 2 versions of Animal, Vegetable, Miracle's Family Secret Tomato Sauce. Both versions were fantastically delicious in thier own way.

Sweet Sauce- closest to the original recipe
This version topped Chicken Parmesan.

10 cups tomato puree
¾ cup fresh basil
3 tbsp fresh oregano
2 tbsp fresh thyme
1 ½ tbsp fresh parsley
2 tsp salt
½ tsp pepper
2 tbsp honey
½ tsp cinnamon
1/8 tsp nutmeg

Spicy Sauce
This version was served with homemade meatballs and fresh egg & rosemary pasta.

10 cups tomato puree
¾ cup fresh basil
¾ oz fresh oregano
fresh parsley (I didn't measure the herbs, but used all that I could cut off my plants!!! And I still wished for more!)
fresh thyme
fresh marjoram
2 tsp salt
½ tsp pepper
1 tbsp honey
½ tsp cinnamon
1/8 tsp nutmeg
½ tsp crushed red pepper, ground in chopper (little too spicy for us)
1 tsp brown sugar (added b/c was too spicy)

To a large stockpot, add pureed tomatoes and all seasonings, bring to a boil, and simmer on low heat for two to three hours until sauce has thickened to your liking. Stir frequently, especially toward the end, to avoid burning.
