Bran and Oat Sandwich Bread
Adapted from How to Cook Everything: Vegetarian

2 cups unbleached all purpose flour
1/2 cup oat bran
3/4 cup whole wheat flour
2 tsp salt
1 1/2 tsp instant yeast
1/4 cup honey
2 tbsp oil or butter
1 cup cool milk
3/4 cup rolled oats

Using stand mixer with dough hook, mix flours, bran, salt, and yeast. With the mixer running, add the honey and oil. Gradually add the milk, taking care not to use too much. Slowly knead in oats. Shape the dough into a rough ball, place it in a large, well oiled bowl, cover and let rise for at least 2 hours until nearly doubled in bulk. Deflate the ball and shape once again into a ball, let rest on a lightly floured surface for about 15 minutes, covered.

Using only enough flour to keep the dough from sticking to your hands or the work surface, flatten it into a rectangle, then shape into a loaf. Grease a 9x5 inch loaf pan, place loaf in pan, flattening the top with the back of your hand. Cover and let rest for 1 hour or until the top of the dough is nearly level with the top of the pan.

Preheat the oven to 350. Brush the top of the loaf lightly with melted butter, then place in oven. Bake for about 45 minutes. Remove the loaf from the pan and cool on a wire rack before slicing.
