Healthy Honey Chicken

Yet another super easy somewhat healthy staple dinner!  This is like a sweetened Oven Fried Chicken.


Healthy Honey Chicken
3 tbsp wheat germ
2 tbsp honey
1 tbsp dijon mustard
1 tbsp apricot nectar or jam
3/4 tsp soy sauce
1 lb boneless skinless chicken breast

Preheat oven to 375. 
In a small bowl, mix together all ingredients except chicken. 
Arrange chicken in a baking dish and cover with mixture.
Bake until crispy, about 30-35 minutes.

Caramelized Butternut Squash

Butternut squash is one of my favorite veggies and you can't go wrong no matter how you prepare it.  But, if you're looking for a sweetened version, look no further!

Caramelized Butternut Squash
Adapted from The Barefoot Contessa Cookbook

2 medium butternut squash (4 to 5 pounds total)
6 tablespoons unsalted butter, melted
1/4 cup light brown sugar, packed
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper

Preheat the oven to 400 degrees F.

Cut off and discard the ends of each butternut squash. Peel the squash, cut them in half lengthwise, and remove the seeds. Cut the squash into 1 1/4 to 1 1/2-inch cubes and place them on a baking sheet. Add the melted butter, brown sugar, salt, and pepper. With clean hands, toss all the ingredients together and spread in a single layer on the baking sheet. Roast for 45 to 55 minutes, until the squash is tender and the glaze begins to caramelize. While roasting, turn the squash a few times with a spatula, to be sure it browns evenly. Taste for seasonings and serve hot.

Bahama Breeze's Cinnamon Yam Mash & Plantain Chips

Here's yet another delicious recipe froom Bahama Breeze.  I'm so thankful they post their recipes online.  Without a B.B. close, I only get to go there once a year at most!

Cinnamon Sweet Potato Mash
Adapted from Bahama Breeze
Serves: 8

INGREDIENTS:
5 pounds of sweet potatoes, peeled, 2" diced
2 quarts water, hot
1 tbsp salt
8 oz butter, cold, ½" dice
1 ½ tsp cinnamon, ground
¼ tsp pepper, white, ground
½ cup brown sugar


PREPARATION:
1.Place the peeled and diced sweet potato in a large stockpot. Add hot water and salt, then place the stockpot on the stove over medium heat. Bring to a boil and cook for 35 minutes or until an inserted fork in the potato pierces easily.
2.Drain the water from the poatoes and transfer them into a mixing bowl. Using a wire whisk, mash until potatoes are broken up. Add diced cold butter, ground cinnamon, white pepper and brown sugar then mix again until the potatoes are smooth and all of the ingredients are mixed evenly. If needed, season with additional salt to taste.
3.Place the cinnamon potato mash on a large serving platter and garnish with fried malanga chips and chopped parsley. Enjoy!

Plantain Chips
INGREDIENTS:
1 pound plantains
Canola Oil for Deep Frying
¼ tsp Salt

PREPARATION:

1.Peel the skin of the plantains. Then slice the plantain into approximately 1/8" slices. Place the slices into cold water to remove excess starch.
2.Set the Fry Daddy up to manufacturer's instructions and turn the heat to 350°F. Fry 6 of the plantain chips at one time until crisp. Remove the plantain chips from the fry daddy and drain them on a paper towel to remove excess oil. Season lightly with salt.

Granmonnie's Mac and Cheese

We all know that Granmonnie was a great cook.  And her Mac and Cheese doesn't dissapoint!

Granmonnie's Mac and Cheese
Boil a small box of noodles until not quite done.
Butter or spray baking dish and pour in noodles. 
In a seperate bowl, combine one egg, 1/2 tsp sugar, 1/2 lb cheese chunks, 2 tbsp butter. 
Add enough milk to noodles to almost cover, add mixture and stir.
Bake at 350 for 30 minutes, stirring at halfway.  Top with additional slices of cheese when stirring.
